The only thing we love more than drinking a great white wine is making one✨ Here we see Chardonnay aging on its lees, known as 𝘴𝘶𝘳 𝘭𝘪𝘦 aging.⁠
⁠
𝘚𝘶𝘳 𝘭𝘪𝘦 (French for “on the lees”) aging sounds fairly straightforward: it is a stylistic choice to allow wine to age in contact with its lees. Though 𝘴𝘶𝘳 𝘭𝘪𝘦 aging has been practiced since Ancient Rome, we are still uncovering the science that enhances the complexities of the finished wines aged on their lees.⁠

This type of aging is typically associated with white wines, such as Chardonnay from Burgundy and Muscadet from the Loire Valley, as well as sparkling wines like Champagne.⁠

We've mentioned some exciting new additions to , and Malenca is no exception!

🔬 The Enologist in our Analytical Laboratories, Malenca, is a seasoned veteran in the lab. Originally from Berkeley, California, a love of learning led her to the East coast where she received her BA in Chemistry and Biochemistry from Haverford College.

🍇 Back on the West coast, a love of wine persuaded her to receive a Master of Science degree in Viticulture and Enology from UC Davis.

🐶 When Malenca is not analyzing clients’ wines in the lab, she enjoys cooking delicious meals while drinking an aromatic white at home with her pup, Munchie.

🍷 Malenca thrives in the lab, where she solves problems with efficiency and care, answers perplexing questions using analytical data, and helps our clients create truly special wines through science.

Are you wondering what type of pump your operation needs?

Ideally, the choice of pump used for moving wine should meet these criteria:
‣ Minimize shearing and agitation of the wine
‣ Minimize the wine’s exposure to oxygen
‣ Be tolerant of sediment and solids
‣ Be easily variable between low and high transfer rates
‣ Be self-priming
‣ Be easy to clean and sanitize

We can't help but wonder which client Eddie is getting ready to rack for!

Transferring wine from one container to another is referred to as racking and can be done in multiple ways. Our rack wall has all of the tools our team needs to get the job done quickly and cleanly.

Our rack wall at Gravity is akin to the water cooler in an office environment...it's not uncommon to see a couple of team members gathering and chatting next to this organized wall of hardware ⚙️🔧

👀 As the Lead Bottling Technician here at Gravity Wine House, José is the eyes and ears on our mobile bottling line. ⁠
⁠
🎼 With nearly twenty years of experience both in cellars and on bottling lines, he can pinpoint a problem just by listening to bottles pass through the sparger, filler, corker, and countless other components of the line. In this sense, we view José as the grand conductor of a bottling orchestra, ensuring all pieces and parts move and work together in harmony. ⁠

🍇 A Sonoma County native, José grew up among vineyards in Cloverdale, California. ⁠
⁠
🚤 When he’s not on the bottling line, he can most likely be found with his family, cruising on a boat at Lake Sonoma or enjoying a live soccer or basketball game.⁠
