I always have trouble preparing a Belgian endive to stuff for a holiday appetizer. Please see this tip from my top chef, Ellen Greaves and enjoy!

To clean Belgian endive, cut the leaves off the stem, and move up the clumps as you go. Use a sharp paring knife and cut the base off. You can then peel the loosened leaves off until you reach the point where they are attached. Cut off the next inch of base which loosens up the next batch of leaves. You are now ready to stuff your belgian endive!

Such a worthy cause as we are entering into the winter months....Maureen's Haven provides shelter and food to the homeless here on the East End.
