Slow living means breakfast with my littles. My favorite meal. Hmmm, explains so much about why Peoples Waffle has been such a passion project for me.
I grew up on these waffles. Light and slightly sweet. Crispy with a soft interior. They are perfection. They're my Grandma's recipe and while I made a few adjustments in order to produce larger quantities...they are very close to my childhood memories.
I feel so honored that she gifted me with the recipe and blessed my use of it in the restaurant. I can't think of a better legacy to leave than the knowledge that I've helped feed hundreds of people something wonderfully tasty and in the process hopefully spread a little love and sunshine. That's what it is all about. At the end of the day it's not about the money (that you never make as a small, first-time restaurant owner) or any public accolades--it's about the people whose lives are just a teeny tiny bit brighter.
