Our Kitchen Essentials class series has officially come to a close. This winter was filled with learning, fun, and flavor as we explored roux, sauces, pasta, and boards together. A heartfelt thank you to Stockton Library for welcoming us as part of the Charlie Cart Project. We had a fantastic season, and we’re already excited for what’s next. The next class series can be summed up in one word: Desserts!

Happy St.Patricks Day!!!

Shepherd’s Pie is a dish with roots from the 19th century, originally created as a practical way to repurpose roasted meats into a meal that was both frugal and hearty. Traditionally made with minced mutton or lamb, it reflected the resourcefulness of Irish and rural households, where making the most of available ingredients was both a necessity and a point of pride.

While many modern recipes now use ground beef technically making the dish a Cottage Pie the heart of the meal remains the same. Whether prepared with its traditional protein or a modern variation, Shepherd’s Pie continues to honor Irish heritage, celebrating a culinary tradition built on simplicity, resilience, and the importance of gathering around a sustaining meal.

Searing properly, Seasoning in layers, Controlling heat, Cutting clean, Tasting as you go. These are the “boring” reps that make everything else look effortless. Fancy techniques don’t save a dish fundamentals do. If you want your food to level up, don’t chase complexity. Chase consistency in the basics.
