Easy Stuffed Meatloaf with Mozzarella

Ingredients:
For Meatloaf:
1 pound ground beef
½ pound ground pork
1 cup breadcrumbs
½ cup milk
2 large eggs
½ cup Parmesan, grated
1 small onion, chopped
3 cloves garlic, minced
2 tablespoons fresh parsley
1 teaspoon salt
½ teaspoon pepper
1 teaspoon oregano
For Cheese Core:
4 ounces mozzarella, strips
4 ounces provolone, strips
For Topping:
1 cup mozzarella, shredded
¼ cup fresh parsley

Directions:
Heat oven to 375°F. Line pan with foil.
Mix beef, pork, breadcrumbs, milk, eggs, Parmesan, onion, garlic, parsley, salt, pepper, oregano.
Pat into rectangle on parchment. Layer cheese strips down center. Roll up, seal edges.
Place seam-side down in pan. Bake 45-50 minutes.
Top with shredded mozzarella. Bake 10-15 minutes until melted.
Rest 10 minutes. Sprinkle with parsley. Slice and serve.

Prep Time: 20 minutes
Cook Time: 1 hour
Total Time: 1 hour 20 minutes
Servings: 6
