Hello everyone. It's been a long time since you last heard from me on this page. We moved to the Philippines and lived there for a good 3 years to be near my aging momma. When she passed in April 2017, we decided it's time to move back to the States. Mike missed the two boys a lot. So here we are. Back.in.the.States!
I will be posting recipes, photos and hopefully how-to-videos on this page soon. As of today, post Thanksgiving day, I will share what we had for breakfast this morning....
We had a lot of pears that I am the only one eating and I can't eat all of them by myself, so Mike made a pear jelly (sugar-free) which turns out to taste like apple sauce. And we still have lots of pears left. So this morning I washed some of them, dried in paper towel and sliced them. I melted 1/4 stick of butter in an iron skillet and added the sliced pears. I then added two tablespoons of brown sugar and a double shake of cinnamon powder. Stirred it occasionally until the sugar and the juices from the pears are caramelized. Remove it from heat and transfer to a bowl.
In another skillet, I drizzled two tablespoons olive oil and sauteed chopped tomatoes then I added some cubed leftover ham from yesterday's Thanksgiving dinner, stirred them until completely heated through and added 6 scrambled eggs. Voila! Ham and egg omelet...with freshly chopped cilantro. Toast/omelet/fried pear with caramel is what we had for breakfast. Very filling. Try it!
