🛠️ SUNDAY THOUGHTS (for Midwest owners)

You’re closed. Or you’re doing payroll. Or you’re dreading Monday’s walk-in cooler.

I don’t do fancy sales funnels. I’m a chef who learned restaurant management the hard way – on the line, running out of product, watching labor eat my profit.

Now I help small Indiana & Midwest restaurants fix the back‑of‑house math so owners can breathe again.

👉 Free 5‑Point Profitability Audit – DM to get.
👉 4‑Hour Deep Dive onsite – $500 for independent spots.

That’s it. No retainer. No long‑term contract.

If you want to stop guessing and start profiting – DM me “SUNDAY” and I’ll reply tonight.

You’re running a small independent spot in Indiana or the Midwest. Pick your biggest headache right now:

A. Food costs are out of control
B. Labor is killing me
C. I know we’re wasting food but I don’t know where
D. Honestly all of the above 😅

👇 Drop the LETTER in the comments.

I’ll reply to every single one with one free tip – no strings attached.

*And if you pick D… we should talk.* 😉

✅ REAL. LOCAL. PROFITABLE.

Name: Could be you!
Location: Midwest Restaurants
Problem: Food cost 37%, labor 35%, no idea where money was going.

6 weeks with me:

📉 Food cost → 31%
📉 Labor cost → 30.5%
📈 Monthly profit → +$4,800

We didn’t change the menu. We changed the SYSTEMS.

✔️ Ordering pars

🗑️ THAT TRASH CAN IS COSTING YOU $200/DAY

I walked into a family restaurant in Muncie, Indiana and weighed their daily food waste.

$187. In ONE Tuesday.

Here’s what we changed:

✅ 3x/week produce orders (not 5x)
✅ “Stock pot Friday” – all trimmings become soup special
✅ Waste log on the prep table – every scrap weighed and recorded

30 days later? Waste dropped 67%.

That’s $3,700/year back in their pocket – from garbage.

👇 Comment “WASTE” and I’ll DM you my free Profitability Audit. Section 3 is all about stopping spoilage.

*Midwest restaurants – we’re too proud to throw away money.*

⏰ MIDWEST LABOR LEAKS

“But that’s just how our schedule has always been.”

Famous last words – before we saved a small Indiana diner $3,200/month.

They had FOUR cooks at 6am. First 30 minutes of sales? $84.

We moved two cooks to 8am, cross‑trained the dishwasher for light prep, and cut the lunch overlap by 45 minutes.

Labor dropped from 38% → 30% of sales. No one got fired. Same team. Smarter schedule.

👉 Quick test: Pull your POS sales by half‑hour. Where are you overstaffed?

Drop a ⏰ if you’re afraid to look at your labor % today.

DM me “LABOR” for a free 15‑min chat – no pitch, just one fix you can make this week.

❄️ WALK‑IN COOLER CONFESSIONS (be honest)

Indiana restaurant owners – I’ve opened hundreds of coolers. And I’ve never met an owner who doesn’t cringe when they look inside.

Quick self‑audit:

🔴 Unlabeled cambros?
🔴 Protein stored above ready‑to‑eat?
🔴 No temp log on the door?
🔴 Mystery containers from “I don’t know when”?

If you checked even ONE – you’re losing money every day.

The fix isn’t more expensive equipment. It’s 15 minutes of daily discipline.

👇 Comment “COOLER” and I’ll DM you my free storage checklist (part of my full Profitability Audit).

*Let’s clean up that cooler – together.*

🧮 MIDWEST MENU MATH

Indiana and Midwest restaurants: You have some of the best comfort food in the country. But that “famous” tenderloin might be bleeding profit.

Example from a real client in Fort Wayne:
Their top seller – breaded pork tenderloin sandwich – had a 41% food cost 😬

We:
✔️ Swapped to a local bun supplier (saved $0.45)
✔️ Reduced the side portion from 8oz to 5.5oz (guest never noticed)
✔️ Raised price $1.50

Result → 27% food cost. Extra $15,000/year from ONE item.

👇 Drop a 📉 if you’ve never actually calculated your bestseller’s true cost.

You’re not throwing away food. You’re throwing away profit.

Walked into a client’s walk-in last week. Found three cases of wilting lettuce, a half-bucket of ranch that had turned, and trim ends from two days ago that could have been stock.

We weighed their daily waste. Over $200/day—mostly avoidable.

After fixing ordering pars, storage rotation, and a simple “waste log” system, they cut spoilage by 67% in 30 days.

Want to find your hidden waste leaks?
I made a free 5-Point Kitchen Profitability Audit—takes 30 minutes to spot where your money’s going in the bin.

👉 Comment “WASTE” and I’ll DM you the PDF.

If you want me to come do the audit for you (1 day, $500 for Indiana small restaurants), just ask.

More profit from the food you already buy.
