The mountain did its part. Now the cellar takes over.

The crush, the first ferment; the 2026 vintage is finding its shape, tank by tank, in the weeks after harvest. This process isn't described on the label, but decides everything on it.

One grape. Three elevations. Three entirely different w**es.

From Base Camp at sea level to the rocky parcels at 1,475 feet, every foot of elevation changes what ends up in your glass.

The best way to understand it is to line up all three and taste through them: https://loom.ly/vDbEqg0

Four in the morning, high fifties, fog thick enough to erase the mountains. That's when Seven Apart picks.

Warm fruit is unstable fruit. The moment a cluster leaves the vine, it starts to change, the same way an apple browns once it's cut. So the crew works in the dark, moving fast, keeping everything cold until it reaches the sorting table.

This year gave the vineyard a strange one. Ninety-degree heat in March, then a cold April that caused the vines to shatter at flowering and drop blossoms instead of setting them, and less fruit followed. Base Camp on the valley floor is nearly to harvest, while Stags Ridge, a thousand feet up on Atlas Peak, is still finishing its color change, weeks behind.

Yannick walks through what decides a harvest date, and why the estate ends up running two separate harvests most years, in the new Journal piece. https://loom.ly/lUUmKhc

Every vintage gets only one release; not two, nor a restock in the spring, one. The estate produces roughly 2,000 cases across all four w**es, and that number comes from the land, not from a marketing decision. Once this release closes, there isn't another one until next year's harvest comes in.
