Flour Mixture
1.5 cup flour
1 tbsp. Garlic powder
1 tbsp. Italian herbs
Salt & pepper to taste
A pinch of paprika

Egg Mixture
2 eggs + S&P + paprika

For frying: 1 cup avocado oil at medium to medium high temp

Mashed Potatoes

4 peeled large Yukon gold potatoes
Boil in salted water for 20 minutes
Drain and rinse
1/2 cup-3/4 cup heavy cream
S&P to taste
1 tbsp. Butter to finish

12 ounces boneless, skinless chicken breast, cut into ¼-inch-thick bite-sized slices 1 tablespoon egg white, lightly beaten
2 teaspoons cornstarch
1½ teaspoons plus 1 tablespoon Shao Hsing rice w**e or dry sherry
1 teaspoon salt
3 tablespoons hoisin sauce
1 teaspoon soy sauce
2 tablespoons peanut or vegetable oil
1 tablespoon minced ginger
1 tablespoon minced garlic
½ teaspoon red pepper flakes
1 medium green bell pepper, cut into ¼-inch-wide
