A little behind-the-scenes look at what’s happening inside the w**ery during harvest. 🍇

What you’re seeing here is a pump-over—an important part of red w**e fermentation.

As the grapes ferment, the skins naturally rise to the top of the tank, forming what we call the “cap.” During a pump over, juice is drawn from the bottom of the tank and gently circulated back over the top, keeping the skins wet and helping us extract color, flavor, and tannin.

We also use irrigation on the new w**e to keep the cap evenly saturated, allowing the w**e and skins to stay in contact throughout fermentation.

It’s one of those repetitive, hands-on steps that may not get much attention—but plays an important role in shaping the w**e that eventually makes it into your glass.

Every grape we harvest is picked by hand—and there’s a reason for that.

Hand harvesting allows us to be more selective in the vineyard, choosing the clusters we want while leaving behind fruit that isn’t quite ready. It also means the grapes arrive at the w**ery in better condition, with less breaking or crushing along the way.

And because every block—and sometimes every section within a block—ripens a little differently, picking by hand gives us the flexibility to harvest exactly when we believe the fruit is ready.

It takes more time and more hands, but for us, that extra care in the vineyard is worth it.

Because long before a w**e reaches your glass, quality starts with what we choose to bring in from the vine. 🍷

There’s a lot that happens between the vineyard and your glass. 🍇 → 🍷

Once the grapes leave the vine, the work of turning a growing season into a finished w**e begins. Over the weeks, months, and years that follow, the fruit will move through dozens of decisions and processes—each one helping shape what eventually ends up in your glass.

From harvest and fermentation to aging, blending, bottling, and beyond, here’s a look at the journey every bottle Pepper Bridge w**e takes from vineyard to glass.

No, we didn’t put cherries, to***co, or vanilla in your w**e. 😉

So when you hear someone say they taste dark cherry, leather, baking spice, or any number of other flavors in a glass of w**e… where are those tasting notes actually coming from?

The answer has a little to do with the grape, a little to do with the w**emaking process, and a lot to do with the incredible way our senses connect aromas and flavors to things we already know.

In this Questions from the Tasting Room, Andrea is breaking down what tasting notes actually mean—and why you might taste something completely different from the person sitting next to you. 🍷
