Salisbury Steak
Ingredients
For the Steaks
1 pound lean ground beef
⅓ cup panko breadcrumbs
1 teaspoon Italian seasoning
1 large egg
1 tablespoon ketchup
1 teaspoon Dijon mustard
2 teaspoons Worcestershire sauce
salt and pepper to taste (I use about ½ teaspoon of each)
1 garlic clove finely minced
2 tablespoons extra virgin olive oil

Mushroom Gravy
1 tablespoon extra virgin olive oil if needed
½ onion diced
8 ounces sliced mushrooms
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 ½ cups beef stock or beef broth or beef consomme
1 tablespoon ketchup
1 teaspoon Worcestershire sauce
salt and pepper to taste

Instructions
In a large bowl, combine the ground beef, panko breadcrumbs, Italian seasoning, egg, ketchup, Dijon mustard, Worcestershire sauce, salt, pepper, and garlic.

Form into 4 oval patties about ¾ inch thick.
Heat olive oil in a large deep skillet over medium-high heat. Add the steaks and cook until golden brown, about 4 to 5 minutes on each side. (Steaks do not need to be fully cooked at this time.) Remove steaks to a plate and set them aside.

Mushroom Gravy
Add chopped onions to the skillet, season with salt and pepper, and cook until partly translucent, 3 to 4 minutes. (If the skillet needs a little more oil, add it now.)

Add mushrooms, season with salt and pepper, and cook until golden, about 3 to 5 minutes.
8 ounces sliced mushrooms
Turn down the heat to medium, add the butter and stir to melt. Add flour and whisk until combined with the butter.

Gradually pour in the beef stock, whisking continuously. Add the ketchup and Worcestershire sauce and season with salt and pepper as needed.

Bring to a simmer and add steaks back to the skillet. Cover and cook for another 5 minutes or until steaks are cooked through. If you notice the gravy getting too thick, add more beef stock or water.

Serve Salisbury steaks with gravy on top over mashed potatoes. Sprinkle with fresh ground black pepper and some parsley

Stuffed Bell Peppers
Ingredients:
6 medium green peppers
1 lb ground beef
1 chopped onion
1 (6 7/8 ounce) box of Rice-a-Roni mix, Spanish flavor
1 (16 ounces) can of tomato sauce
1 teaspoon sugar
1 (14 1/2 ounce) can of tomatoes (for use in making the rice)
1 cup shredded cheddar cheese or 1 cup American cheese

Directions:
Remove tops and seeds from peppers; parboil peppers for 5 minutes and drain.
Place peppers in a baking dish.
Combine ground beef and onion and cook together until done.
Drain and set aside.
Prepare Rice-A-Roni according to package directions.
When rice is done, combine it with beef and onion.
Fill peppers with rice mixture.
Mix the 1 teaspoon sugar with the tomato sauce and pour this AROUND the peppers (not over).
Cover the baking dish.
Bake at 350°F for 35 minutes and then uncover and top with the shredded cheese.
Bake uncovered for about 5 minutes more to melt the cheese.
Serve with the tomato sauce

Banana Apple Bread
For the apples:
2 tablespoons unsalted butter
3 tablespoons firmly packed dark brown sugar
2 Granny Smith apples, peeled, cored, and cut into 1/2-inch pieces
½ teaspoon ground cinnamon teaspoon pure vanilla extract

For the banana bread:
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
¼ teaspoon freshly ground nutmeg
½ teaspoon kosher salt
8 tablespoons (1 stick) unsalted butter
1 cup granulated sugar
2 large eggs
¼ cup fresh orange juice
1 teaspoon pure vanilla extract
1 ¼ cups very ripe mashed bananas (2 to 3)

Before you start:
Position a rack in the center of your oven and preheat the oven to 350°F. Lightly butter and flour a 1 1/2-quart loaf pan.

To make the apples:
Preheat a medium skillet over medium-high heat. Add the butter and brown sugar and heat until bubbling. Add the apples and cinnamon and sauté until golden and tender, about 5 minutes. Stir in the vanilla. Remove from the heat and set aside to cool.

To make the banana bread:
In a medium bowl, whisk together the flour, baking soda, cinnamon, cloves, nutmeg, and salt.

In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar until light and fluffy, 1 to 2 minutes. Add the eggs, one at a time, mixing well after each addition. Scrape down the sides of the bowl.

In a small bowl, combine the orange juice and vanilla.

Add the flour mixture to the butter mixture in three batches, alternating with the orange juice mixture, mixing well after each addition. Scrape down the sides of the bowl after each flour addition. Stir in the mashed bananas until combined. Then stir in the reserved apples.

Pour the batter into the prepared loaf pan. Bake for 55 to 60 minutes, or until a wooden skewer inserted into the center comes out clean. Remove to a wire rack to cool for 20 minutes before unmolding onto the rack to cool further

Pan Seared Tilapia
Ingredients
2 Tilapia Filets
1 Lemon
1 Tbsp Capers
2 Tbsp Butter
Seafood magic seasoning

Directions
Liberally season your tilapia with an all-purpose seafood seasoning blend.

Bring the pan to med-high heat, add just enough oil to barely coat the pan, and add a couple of tablespoons of butter.

Place tilapia in the pan and cook until nicely browned, about 4 to 5 minutes on one side….. Add in the sliced lemon, a squeeze of lemon juice, and a teaspoonful of capers.
Flip the tilapia and cook another 4 to 5 minutes on another side, reducing heat to med.

We had this with tomato and arugula salad so guess what, that makes the entire dish keto-friendly yet packed with flavor
