I had never grilled a Cowboy steak (bone-in rib eye?) before and finally tried it. I used indirect heat on the right side, around 240 degrees, and when the internal temp got to 115 degrees, I stoked up the coals and moved the steak directly over the fire. I should have pulled it off at 135 but slightly over-grilled it. All in all, it was a fun and a tasty experience.

We get asked a lot what’s the best grill brush. I haven’t tried all of them, but the simple wood handle stainless steel bristle brush from Weber is my favorite. I always brush the cooking grates before grilling and after, and the grates stay nice and clean. You don’t need to use a lot of pressure when the grates are warm. The bush will last longer too. You can wipe grates with a paper towel so no bristles are left behind, especially if you have a brass bristle brush (don’t buy them). If your brush gets greasy, soak it in hot soapy water and blast the hell out of it with a pressure washer. A hose will work, too 🙂.

Hello! A customer contacted us to clean and service his very dirty grill. The issue was he lived in Maine, two hours away. So we took on the challenge, made the trip, and made the grill look and work great. Oh, and we saw a lighthouse too. Below are before and after pictures.
