Some w**es are simply part of a w**e list. Others become part of a w**ery’s identity.
For us, Baco Noir is one of those w**es.
Over the years, our Baco Noir has developed a loyal following. Guests remember it for its deep blackberry and dark cherry character, soft tannins, and smooth, balanced finish. Some return specifically for this w**e—and since the previous vintage sold out, we’ve continued to receive calls and messages asking when it will be back.
Today, we’re happy to share a small but important milestone: the new vintage is now in the bottle.
In the photo, the previous vintage is on the left and the newly bottled vintage is on the right.
It isn’t ready for the tasting room shelf just yet. Over the next several weeks, the w**e will rest in our cellar while we continue to taste it and follow its development.
At Castel Grisch, bottling is an important moment, but it isn’t the final decision. We release a w**e when we believe it is ready to show the character we intended.
We expect the new Baco Noir to be available within the next month or two.
To everyone waiting for its return: your Baco Noir is getting closer.
