Quick question for the school nutrition world:

When was the last time you heard a conference session about the physical cafeteria environment?

Not the menu. Not compliance. Not equipment. The actual room.

We are an industry built around feeding students in a specific space, and we almost never discuss what that space looks like or how it affects the outcomes we spend the rest of our time trying to improve.

I think that is the biggest missed opportunity in school nutrition right now.
