🍞CASHEW BANANA BREAD LOAF🍞
This delicious banana loaf is gluten-free, oil-free and best of all, natural sweetened using only banana and dates!!!👍🥰
FULL RECIPE [Makes 8-10 slices]
1️⃣ Preheat your oven to 180C /350F. Grease and line a loaf pan and set aside.
2️⃣ In a blender, combine 1 1/4 cups unsweetened cashew milk, 3 ripe bananas, 12 pitted & soak Medjool dates, 2 tsp vanilla extract and 2 tsp apple cider vinegar. Blend until smooth.
3️⃣ In large mixing bowl, mix together 1 3/4 cups buckwheat flour, 3/4 cup blanched almond meal, 1 tsp baking powder, 1/2 tsp baking soda, 1 tsp cinnamon and 1/2 tsp sea salt.
4️⃣ Pour the wet mixture into the dry and mix until well combined. Pour into the prepared loaf pan. Sprinkle on 1/4 cup chopped cashews. Bake in the oven for 55-60 minutes or until cooked through.
5️⃣ Allow loaf to cool completely on a cooling rack before slicing.
Despite there being no additional sweetener aside from the bananas and dates, this loaf is still perfectly sweet!!👌😲
