3.Báo cáo doanh thu nhà hàng theo thời gian (Time-based Data)

Restaurant Revenue Analysis: Three Critical Dimensions
Rather than focusing solely on aggregate monthly revenue, sophisticated F&B managers dissect their financial performance across three critical dimensions: product mix, sales channels, and time.
1. Restaurant Revenue Analysis by Menu Item
Revenue distribution across individual menu items reveals more than customer preferences; it provides a crucial perspective on Return on Capital Employed (ROCE).
Many F&B businesses mistakenly equate a high Gross Margin with actual profitability. A product category may generate a Gross Margin of up to 65%, yet still produce negative cash flow due to excessive cold-storage expenses, substantial preparation waste, and prolonged preparation times.
Cross-referencing Sales Mix with Contribution Margin compels management to make difficult but commercially necessary decisions.
Items classified as "Dogs"—characterised by low sales volumes and complex inventory requirements—effectively drain operating expenditure (OPEX) without generating sufficient returns. Eliminating these underperforming products is essential to freeing up kitchen capacity and improving operational efficiency.
Conversely, "Stars" represent the lifeblood of a restaurant's cash flow. They should occupy the most prominent positions on the menu and be strategically incorporated into staff-led upselling initiatives to maximise revenue potential.
2. Restaurant Revenue Analysis by Sales Channel
The rapid expansion of food delivery platforms has created an illusion of revenue growth across the F&B industry. In reality, revenue generated through platforms such as Grab, ShopeeFood, and Baemin can be significantly eroded by commission rates of up to 20–25%.
Conducting a separate Profit and Loss (P&L) analysis for each sales channel exposes a fundamental question: Do thousands of incoming delivery orders actually translate into sustainable profitability, or is the restaurant generating a Net Profit that approaches zero—or even falls into negative territory?
If the latter is true, the business is merely exhausting its equipment capacity and human resources without creating meaningful economic value.
These insights provide an essential foundation for restructuring channel-specific pricing through a Tiered Pricing Strategy.
Restaurants should introduce exclusive, strategically designed meal bundles for digital platforms, ensuring that online customers absorb a reasonable proportion of commission-related costs rather than allowing third-party intermediaries to erode the business's core profit margins.
3. Restaurant Revenue Analysis by Time
In the F&B industry, time and seating capacity constitute a form of Perishable Inventory—an asset that cannot be stored or recovered once its revenue-generating window has passed.
An unoccupied table at 3 p.m., during off-peak hours, continues to incur rental expenses and asset depreciation at essentially the same rate as it would during peak trading periods.
Transforming transactional data into a visual Heatmap provides a powerful means of addressing the challenge of underutilised fixed capacity.
By identifying precisely when customer traffic rises and falls, managers can align their operating costs more closely with actual demand. This involves optimising full-time staffing levels, deploying flexible part-time personnel during peak periods, and continuously adjusting inventory Par Levels in response to daily fluctuations.
Only when variable costs move in proportion to revenue fluctuations can a restaurant break the cycle of paying for labour and resources during periods of operational idleness.
Ultimately, effective revenue management is not simply about generating more sales. It is about understanding where revenue originates, how much profit each channel contributes, and when operational resources create the greatest economic value.
