"Healthy Feast for Dad"
Father's Day has arrived and we must reflect on the serious health issues burdening the men of America. The local and national media inundate the public with women’s health and fitness stories. I believe deficient time is devoted to discussing men’s health concerns. Gender studies demonstrate an alarming trend toward a man’s health being at greater risk than their female counterpart; on average, men tend to die six years earlier than women. This father’s day hundreds of thousands of men’s lives are at risk! Immediate action must be taken to combat the growth of this staggering national health crisis.
Statistical data collected by the Office of Men’s Health and Statistics illustrate several leading factors contributing to the disturbing decline in men’s health, of which include:
1) A higher percentage of men have no healthcare coverage.
2) Men make half as many medical visits for prevention.
3) Our community discourages healthy behaviors in men and boys.
Most notable is the underlying perception that men lead less unhealthy lifestyles and are more prone to taking unnecessary chances than women.
I strongly encourage the promotion of healthcare educational services for men of all ages and recommend implementing positive lifestyle changes. Such changes will benefit the individual person, their family and friends. Once a man strengthens their physical and mental well being he will live a happier, healthier and wealthier life. I call upon all ladies to expand their traditional role as family health care provider and become an active proponent for support and health care services for the men in their lives.
More often than naught, women tend to do most of the cooking for their loved ones. I want to share some unique ideas for a delicious and nutritious Father’s Day Feast that will satiate your mans palate and take the extra jelly out of his belly. Happy Father’s Day!

Cedar Planked Salmon
4 tbsp Honey Mustard Reduced Calorie Dressing
1 tsp fresh Dill w**d
Zest of 1 Lemon
1 ½ lb Salmon fillet-cut into 3 oz portions
Cedar Grilling Plank
Soak cedar plank in water about 2 hours or overnight.
Prepare grill for direct heat grilling. Open vents on bottom and lid on grill. Grill needs to be medium hot.
In small mixing container, combine honey mustard, dill, lemon zest. Add salt and pepper. Brush mixture over salmon and let stand for about 15 – 20 minutes. Place salmon on plank, skin side down and place plank on grill. Close lid and grill salmon until fish is cooked through for 10-15 minutes. Remove plank and let salmon set on plank for 5-10 minute. Place on platter and serve.

Wild Rice, Feta Cheese & Grilled Vegetables
6 cups Chicken stock
3 cups Wild Rice
2 cups Broccoli, florets blanched
12 each Asparagus spears, blanched, cut into thirds
1 cup Carrots, shredded
2 each Tomatoes, chopped
1 cup Feta cheese, crumbled
1/2 cup Olive oil
4 Tbsp Vinegar, rice
1 tsp Garlic, minced
1/4 tsp Salt
1/4 tsp Pepper, black ground
1/2 tsp Thyme, ground
1/2 tsp Tumeric, ground
1). Place wild rice in hotel pan and add chicken stock.
2). Steam until tender for 50-60 minutes.
3). Drain and let rice cool down.
4). In a large bowl, add wild rice, broccoli, asparagus, carrots, tomatoes and feta cheese.
5). In a small bowl, whisk together oil, vinegar, garlic, salt, pepper and thyme until coagulated.
6). Drizzle dressing over rice mixture and toss lightly.
7). Refrigerate until the time of service.

Mango Gelatin with Fresh Citrus
Yield: 8 servings
1-10oz pkg frozen mangos, thawed
1 ¾ cups orange juice
1 envelope unflavored gelatin
1 cup diced oranges
1 cup diced grapefruit
Mint Sprigs-garnish
In food processor, puree mangos until smooth.
In medium saucepan, add orange juice and sprinkle gelatin over juice. Let stand about 10 minutes or until softened. Stir over low heat until gelatin is dissolved and lukewarm. Remove from heat. Add mango mixture and whisk until blended. Add oranges and grapefruits. Divide gelatin mixture into eight cups or ramekins. Chill in refrigerator until set about 6-8 hours.
If using ramekins, run knife around edge of ramekins to loosen. Place a small dessert plate over ramekin. Flip plate over and gently shake to allow gelatin to fall onto plate. Garnish with mint and serve
