Picking their moment • Weeks before a single grape reaches the press, our team is already walking the rows, deciding exactly when to harvest.

Berry samples are collected from plots across our 60-acre vineyard, accounting for the variations in sun exposure, soil and altitude that shape each one differently. Hand-crushed in our winery, each sample gives us a direct read on what's happening inside the skin.

From there, the analysis begins. Sugar levels reveal the wine's potential alcohol, while acidity will determine its structure, freshness and ageability. Together, they show us exactly how the fruit is developing, tracked week by week as harvest approaches.

Working undercover • Did you know more than 30 varieties of wildflowers, grasses, herbs and grains thrive alongside our Hampshire vines?

Vineyard director Fred Langdale explains why they’re a vital part of our sustainable philosophy:

1. Brightly coloured wildflowers attract bees and other pollinators into the vineyard, boosting biodiversity.

2. Their roots break up our chalky soils, reducing compaction to allow for better aeration and drainage.

3. Several varieties fix nitrogen directly into the soil, enriching it naturally and reducing the need for artificial fertilisers.

4. Cover crops suppress weeds through competition, and help manage vine vigour, leading to the better quality grapes.

When the vineyard changes colour • As summer reached its peak here in Hampshire, our vines entered one of the most exciting stages of the growing season – véraison.

Véraison, from the French for “onset of ripening”, marks the moment when our firm, green berries begin to soften, build sweetness and change colour.

As you can see here, our Pinot Noir and Pinot Meunier grapes are now well into véraison, taking on deep shades of red and purple.

What's next? Looks like we could be bringing in the first grapes during the middle of September – the earliest harvest on record for Exton Park.

Turning up the heat • As we enter the closing chapters of one of the hottest, driest and sunniest English summers ever recorded, how are things looking for the 2026 vintage?

A growing season of extremes has certainly kept Fred and the vineyard team on their toes. Flowering came early and completed within just 7 days across all 60 acres of vines.

Fruit set brought us fine-looking clusters of Pinot Noir, Chardonnay and Pinot Meunier, which have been ripening beautifully on these long golden days with careful canopy management.

Years like these can be make or break, and it’s a testament to the expertise and hard work of the vineyard team that our vines remain in excellent shape.

In the countdown to harvest, we are quietly optimistic about this memorable vintage.
