Do you know what happens during coffee fermentation? ☕ It’s a crucial step in the post-harvest process of coffee cherries. During this stage, the mucilage layer, a sticky and sugary substance surrounding the coffee beans, goes through a remarkable transformation due to microbial breakdown, which greatly influences the final flavor profile of the coffee.

Here are some key events that occur during fermentation:

🌱 Microbial population multiplies 100x within the mucilage.
🍬 Microorganisms consume 2/3 of mucilage simple sugars.
🧪 Lactic acid, acetic acid, and ethanol are produced.
🔻 pH level drops due to acid production.
🌡️ Temperature of the coffee mass rises.
🔬 Cells that join the mucilage to the parchment are broken up.
