This time of year is always a special one at Hillcrest; when patience, care, and seasons of work finally come to life in the grove.

Each olive carries its own character, shaped by the land and carefully nurtured by our team. Every fruit is hand-picked with intention, preserving the quality that defines what we do.

From the grove, the journey continues into production, where time, precision, and passion come together. It’s here that our olives are transformed - into tapenades, table olives, olive jams, and our signature olive oils - each one a true reflection of the process behind it.

Early mornings, steady hands, and careful picking. Alongside it all is Marickus, our grove manager, guiding each step with care and intention.

Olives of different cultivars are gathered at different stages, each one adding its own character. Some bold, some delicate, all essential.

Nets laid out, crates filling slowly, the work moving tree by tree. Nothing rushed, nothing forced. Just a process kept as natural as possible, allowing the fruit to speak for itself.

Because the depth of flavour, the balance, the quality, it all begins here.
