A L E X A N D E R F O N T E I N Merlot with Chocolate Mug Cake

Try this one. It's easy and simple... yet so delicious!

INGREDIENTS
1/4 cup (30 grams) all purpose flour
1/4 cup (50 grams) granulated sugar
2 tablespoons (12 grams) unsweetened cocoa powder
1/2 teaspoon baking powder
Pinch of salt
3 tablespoons (43 grams) unsalted butter, melted
3 tablespoons (45ml) whole milk
1 small egg
1/4 teaspoon vanilla extract
28 grams lightly broken up chocolate of your choice
1 tablespoon (15ml) water
Berries and Ice Cream (optional for serving)

NSTRUCTIONS
In a 2-cup capacity microwave-safe mug, whisk together with a fork, the flour, sugar, cocoa powder, baking powder and salt until well combined.
Add in the melted butter, milk, egg and vanilla. Whisk well to combine, making sure to mix in the flour mixture in the bottom.
Place the chocolate pieces in the center of the mug. Do not push down; it will sink as it bakes.
Drizzle the tablespoon of water right on top of the batter.
Cook in microwave on full power for 1 minute and 15 seconds to 1 minute and 30 seconds or until the cake rises to the top, the edges look set but the surface of the center looks slightly wet and shiny, and sticks to the finger when touched. It will set up as it sits. Timing will vary according to your microwave, so you'll have to experiment until you find your perfect cooking duration. Do NOT overbake to ensure that saucy, soft centre. If the center still looks raw then give it another 5 to 10 seconds. The cake will fall after it comes out of the microwave.
Let it cool for about 5 minutes.

Top with berries or ice cream if desired, then share with a loved one or enjoy all by yourself....... we won't judge you!

Alexanderfontein Chenin Blanc and a Sweet and Sour Chicken Stir Fry

Sweet and Sour Chicken Stir-Fry is a quick dinner for those busy days – you can have dinner on the table in 30 minutes – start to finish!

INGREDIENTS
• 750 g Chicken Fillets, cut into strips
• Salt and Black Pepper, to taste
• 2 TB Avocado Oil, (or any other suitable oil for high heat cooking)
• 1 bunch Spring Onions, chopped
• 3 t Fresh Garlic, crushed
• 2 1/2 cups Fresh Broccoli Florets
• 250 g Mushrooms, halved or quartered
• 1 Red Bell Pepper, sliced into strips
• 1 1/2 cups Sweet and Sour Sauce

INSTRUCTIONS
1. Season the Chicken with Salt and Pepper – heat the Oil in a large wok or similar pan
2. Fry the Chicken in 3 batches until cooked – remove from the wok and keep aside
3. Using the same wok, (add a little more Oil if needed), fry the Spring Onions, Garlic, Broccoli, Mushrooms and the Red Bell Pepper until tender but still crunchy
4. Return the cooked Chicken to the wok – add the Sweet and Sour Sauce and heat through – add more Salt and Pepper if needed.

Alexanderfontein SHIRAZ and T-Bone Steaks on the Braai

In South Africa, summer means braai—the unifying tradition of good, old-fashioned, gather-round-the-fire barbecue.

Give the below recipe a try and let us know the outcome. Enjoy!

INGREDIENTS
4 tablespoons coarse salt
2 tablespoons white or brown sugar (optional)
2 tablespoons coriander seeds
1 tablespoon black peppercorns
1 tablespoon paprika or 2 teaspoons paprika plus 1 teaspoon cayenne
1 tablespoon garlic flakes or powder
1 tablespoon onion powder
1 tablespoon dried thyme
4 to 6 T-bone steaks, about 3 to 4 cm thick

PREPARATION
Make the braai spice: In a grinder or mortar and pestle, grind all the seasonings and herbs until fine.
Rub steaks with the braai spice and set aside in refrigerator for 1 to 4 hours. Bring to room temperature before grilling.
Heat a grill until screaming hot. Place steaks on the grill and cook, turning every 2 minutes or so, until crusty outside and medium-rare inside, 120 to 125 degrees. Let the steaks rest for 10 minutes before serving and slice across the grain for serving.
