Paul and Nicky Wallace purchased their 25 hectare farm in September 2003 and immediately set out to create their own little piece of heaven. Paul is a viticultural consultant and here at last he could practise what he has advised and encouraged other farmers to do in their vineyards. It has long been Paul’s belief that the cool-climate region of Elgin, previously best known for its apples and pears, is one of the most exciting developing wine regions within the South African wine industry and indeed internationally.

The Nix is our limited-production Noble Late Harvest.

It is quite marvellous with ginger biscuits, a soft creamy blue cheese and glorious fig preserve. The richness is there, certainly, but so is the brightness that keeps it from becoming heavy.

Try it once and you may find your dessert course has acquired a new way of being enjoyed.

One of the certainties of arriving at Paul Wallace W**es is that you are unlikely to go unnoticed.

The black Labradors have taken their duties on the farm rather seriously, particularly when those duties involve greeting visitors.
They are part of the daily life of this place, much as the vineyards, the dam and the old worker’s cottage tasting room are. A smiling face and a wagging tail are, in our experience, a very fine way to begin a visit.

Paul Wallace W**es has never been the work of one person alone.

Paul’s life has been spent largely in vineyards, reading the land and the season with the eye of someone who has earned this judgement over many years. Bobby now carries that understanding into the cellar, bringing his own precision and instinct to the w**es. Nicky has long been the steady force behind much of what keeps the farm, tastings, cottages and business moving as they should.

It is family work, certainly, but not informal work. These w**es carry our name, and that still means everything to us.

National Black Dog Day gives us a rather fitting excuse to speak of one of our most treasured names.

Black Dog Malbec was named after Jake, Paul’s loyal black Lab-Rottie cross, who appointed himself guardian of the vineyards. He followed Paul everywhere.

The w**e has gone on to earn its own reputation, but the name still brings us back to Jake and to the black dogs who have kept watch over the farm ever since.

This week, we raise a well-earned mention to the black dogs of Paul Wallace W**es, past and present.

Our Reflection Chardonnay is a well known icon around our circles - it takes its name from the dam beside our Chardonnay block, where the vines are mirrored in the morning light. That vineyard has given us a w**e of cool-climate precision, fine texture and measured authority.

As summer begins to flirt with us again, freshly shucked oysters feel entirely fitting. A little lemon. A cold bottle of Reflection. Nothing fussy. Nothing wasted.

Crackerjack is our Bordeaux-style blend with a rather personal beginning.

It was first made with Nicky in mind, as she has always had a penchant for w**es of structure, depth and classical proportion. Merlot, Cabernet Franc, Cabernet Sauvignon and Malbec are each treated with purpose before the final blend is drawn together.

The result is a w**e of breadth and polish. Dark fruit, fine tannin and enough composure to hold its place at the table with confidence.

The Paul Wallace W**e Club is intended for those who wish to maintain a closer connection to the farm and to the w**es we are proud to make.

Members receive two curated allocations each year, selected by us and sent directly from the farm. Alongside this, there are cellar door benefits, priority access to limited releases, and the satisfaction of knowing that your cellar remains suitably supplied with w**es grown and made in this cool-climate corner of Elgin.

There are few finer partners for a crisp Sauvignon Blanc than a bowl of creamy, fresh mussels.

Little Flirt brings the brightness and saline edge that the dish requires. The cream finds its counterpoint. The mussels find their lift. The whole affair becomes rather persuasive on a sunny afternoon.

A bottle of Little Flirt, a warm loaf for the sauce and one has very little left to improve.

Recognition of this nature is always gratefully received. It speaks to the discipline of farming in Elgin, the patience required in cellar and the value of making w**es that do not chase trends.

The Malbec remains one of our firmest expressions of the farm. The Chardonnay continues to show the clarity and restraint we prize from this valley.
