Paul and Nicky Wallace purchased their 25 hectare farm in September 2003 and immediately set out to create their own little piece of heaven. Paul is a viticultural consultant and here at last he could practise what he has advised and encouraged other farmers to do in their vineyards. It has long been Paul’s belief that the cool-climate region of Elgin, previously best known for its apples and pear

s, is one of the most exciting developing wine regions within the South African wine industry and indeed internationally.

Who decided Sauvignon Blanc should be kept away from a wood-fired braai?

Little Flirt may be bright and fresh, but she is certainly not fragile. There is fruit, texture and that distinct Elgin line which makes her more than capable of standing beside smoke, flame and something well charred from the fire.

A cold bottle of Little Flirt beside a winter braai feels rather sensible to us - book directly with us: https://paulwallacefamilywines.co.za/cottages/

Pruning is one of the more decisive tasks of winter 🌿

Each cut carries consequence, shaping the vine for the season ahead and influencing the quality of fruit we will eventually bring into the cellar. It requires experience, patience and a clear understanding of what each block is capable of giving.

The vines may appear dormant, but this is where much of the next vintage begins.

We are proud to share that Paul Wallace Wines holds a place on the list at Tannin Wine Bar in Cape Town - and our Black Dog Malbec sits proudly on it.

Tannin is a worthy stop for those who enjoy a serious and well-chosen wine selection. There is thought behind what they pour. There is also a clear respect for the industry, which makes it a fitting home for wines shaped by this cool Elgin valley.

On your next visit to the city, we would be happy to know you called in and found us on the list.

International Pinot Noir Day seems a fitting excuse to open a bottle of our Braveheart Pinot Noir - particularly with what appears to be the early arrival of spring 🍷🌿

Lightly chilled, it is a lovely way to welcome the change of season: bright, fresh and that distinct Pinot Noir character.

Our Braveheart Pinot Noir was a Class Winner at the National Wine Challenge, which is certainly another good reason to put a bottle in the fridge.

Winter gives the vineyards a different sort of presence.

The leaves have fallen, the rows are exposed, and the structure of each vine is there for us to assess without distraction. It is a season of repair and careful decision-making, long before the energy of spring returns.

For us, winter is not an interruption. It is part of the discipline required to make wines of integrity.

Paul has spent most of his working life in vineyards. There are few matters on this farm that Paul will accept from a distance.

Walking the rows remains one of the most important parts of how we farm. It is where decisions are made about pruning, canopy, soil, vigour, fruit load and the general state of each block before a single grape reaches the cellar.

There are not many shortcuts in viticulture. Most answers are found with boots on, secateurs in hand, and enough time spent looking closely.

Winter is perhaps the most persuasive season to stay on the farm 🔥

There are indoor fireplaces for the colder evenings, electric blankets on the beds and enough space to settle into a vacation in Elgin without the pressure of being hurried along.

Add a bottle from the farm and the matter becomes rather simple. The valley knows how to host winter.

Each parcel of fruit was harvested at optimal ripeness and vinified separately for our Bordeaux Blend - the Crackerjack. Following fermentation, the wine spent 14 days on skins before completing malolactic fermentation in French oak.

Maturation took place over 18 months in 225L barriques, prior to blending and bottling in October 2023.

This careful, patient process allows the final wine to show clarity and cohesion.

Our Malbec is grown across three distinct blocks, each vinified separately to preserve its individual character.

Left on the skins for post fermentation maceration before being transferred into 225L and 300L French oak barriques, where malolactic fermentation took place. The wine spent approximately 15 months in wood with a 20% new wood component. 30% was matured in a concrete egg, contributing towards the fruit driven profile and adding yet another building block to the final compilation.

The final wine is a considered composition, shaped by site, method, and time.
