Two days. One storm. Hundreds of bottles.
Even during the peak of the storm, the work at Charles Fox carried on. This week we have been busy with dégorgment for our 2018 Vintage Brut and Reserve Rosé — the meticulous process of removing the lees after extending ageing on the yeast.
Each bottle is then topped with dosage, made from our house liqueur d'expédition, carefully balanced to soften the vibrant natural acidity that defines our Cap Classique, before being cooked and secured with the muselet (wire hoods).
From here, the wines return to the cellar for a further 6-12 months of settling and maturation before release. A reminder that great Cap Classiques is shaped as much by patience and precision as it is by time.
