Once the grapes arrive at the Chamonix cellar, w**emaking becomes a careful balance of science, timing and intuition. Stainless-steel tanks allow the w**emaking team to closely control temperature during fermentation, helping to preserve freshness, aromatics and the natural character of the fruit.⁠

Born from a crossing of Pinot Noir and Cinsaut in 1925, Pinotage has grown into one of South Africa’s most celebrated cultivars, recognised for its distinctive character, depth and versatility.

At Chamonix, our Pinotage is a reflection of our Franschhoek mountain terroir, where the landscape and careful w**emaking come together to create a w**e with a true sense of place.

What happens between the rows is just as important as what happens on the vines.

At Chamonix, cover crops form part of a considered approach to vineyard health. By keeping the soil protected and biologically active, we can support better water retention, reduce erosion and encourage a healthier environment below ground.

Beneath our vineyards lies a diverse landscape of soils, each with its own characteristics. From Cumulic soils, formed through the accumulation of sediments, to Lithic soils shaped by weathered rock, each soil type has distinct layers, textures and properties that influence how water moves through the ground and how vine roots develop.

Understanding these differences helps us care for the land more thoughtfully. Through cover cropping, we protect these valuable soil structures, encourage organic matter to build naturally and support the biological activity that keeps our soils healthy.

It is a long-term approach to farming. Build healthier soil, and you give the vines a stronger foundation to adapt, grow and produce balanced fruit season after season.

Because great w**e doesn’t begin in the cellar. It begins with how we care for the land.
