Providing "Service Excellence" gives us the unique opportunity to make a difference to someone else's life! It involves passion and in order to provide this high standard of service to our guests, we need to develop a deep understanding of our guests' needs. If we can mentally groom ourselves to have the right attitude and also the commitment, this will have a positive effect on our guests. Providing service is like learning to play a musical instrument - you don't get any better at it unless you practice! Putting another's needs first comes naturally to some of us, but others need to constantly work at it. A few other important factors is to have product knowledge, attention to detail and quality awareness. Often the staff have never experienced the style of service that they are expected to give to the customer. This is like asking a chef to serve a dish without tasting it! Therefore how can your staff know what they are trying to achieve in their pursuit to give the guest "Service Excellence" without having had the correct training? Whether we are talking about waitrons, housekeepers, kitchen assistants, supervisors or managers they will all need to be trained so as to be able to perform their specific duties efficiently. Also we must remember that training in not a once-off session to be effective long-term - training is on-going and to reach perfection regular refresher training goes without saying! How important is restaurant cleanliness? Many surveys that have been done on this subject prove that the cleanliness of a restaurant is one of the top criteria that customers use when choosing where to it. However, because customers do not see the inside of the restaurant kitchen, they will base their opinion on the areas of the restaurant that they do see. This starts from the outside areas such as signage or lights not being operational, dirty door and window glass, tacky fliers or menus, dirty floors, grubby tables and chairs that still have crumbs from previous customers and one very important area is a dirty restroom! Of course it goes without saying that all the eating and drinking utensils have to be spotless. Not forgetting the appearance of the employees who should not only all be wearing clean uniforms but should also all have a "clean-cut" appearance. Train your employees to wash their hands many, many times throughout their shifts and teach them to keep their hands away from their hair, nose and eyes as when they are on the floor, they are actually on stage. Having a spotless restaurant may not immediately drive sales growth, but in the long run, having an "unclean" restaurant will definitely drive sales away!

What an amazing thirty-three days I spent on the Sanbona Reserve doing on-site hospitality training! You just have to visit these beautiful lodges at the foot of the Warmwaterberg in the Little Karoo. Seeing the white lions up close was very special as well as all the other wild life. The star gazing was phenomenal and the bush lunch in the middle of nowhere was just the best! The food was all exceptional and a visit to the Explorer Camp was quite remarkable. If you do not have this place on your bucket list yet, then put at the top of the list - it will be a unique experience!

Clouds Estate is an exclusive guesthouse and wine farm situated on the Helshoogte Pass. It is surrounded by beautiful majestic mountains and overlooks the Stellenbosch valley. What a privilege it is to once again be enjoying their five-star hospitality while conducting my specialised on-site waitron and back-of-house training. I definitely recommend adding a visit to Clouds to your bucket list!
