Mexican Tuna Salad with avocado and Pico De Gallo! (Low Carb)

You asked for healthy, this is one of my favourite ways to get a nutrient dense meal in that’s satisfying and so delicious! Perfect for lunch or light suppers! Packed with protein, healthy fats and tons of nutrients! Light, fresh, delicious, healthy and hits all the right spots!

Mexican Tuna Salad with avocado and Pico De Gallo! (Low Carb)

Avo - chop half an avo, and roughly mash the other halfand combine with salt, pepper lemon/lime juice!

Tuna Mayo - 1 can of tuna, drained well, 2 T Mayo (regular/ carb smart) , chopped Jalapeños, spring onions, fresh coriander, salt and pepper.

Pico de Gallo (fresh salsa) -
1/4 cup chopped cucumber, 1 chopped deseeded tomato, 1/2 red onion chopped, red chillie flakes, a splash of lime or lemon juice, (optional but so good), salt, pepper and chopped fresh coriander.

Using a large round cookie cutter to layer, or you could layer it up as is and make it rustic.... or even do a large one if you double the recipe up.
Start with the avocado, you can add bagel buddy to this layer, smoothing out each layer in between, then the tuna, and finally the pico de Gallo... you can refrigerate them but it’s best served fresh!
You could serve this with gem lettuce and have salad boats..
If you want to add carbs, no problem, choose healthier options , some whole-wheat (if you’re not gluten free) pita chips, popcorn chips, whole grain crackers, a whole grain roll like the woolies seeded wholewheat rolls roll would be wonderful with this... or even some gluten free/ sourdough bread would be great too!
When you’re ready to serve, lift the cookie cutter and top with more fresh coriander and a lime/lemon wedge!

The Best Smash Burgers

Who needs Burger King/Mcdees when you have these. I can guarantee, these are way better and once you make them yourself… there’s no going back!

Best ever Smash burgers

Toasted and buttered Brioche buns (recipe previously posted)
Burger Toppings
Lettuce
Grilled onions
Tomato slices
Gherkins/jalapeños
Big Mac sauce (below)
maxi processed cheddar cheese

For the burgers
1/2 kg beef mince
1 T Worcestershire sauce
1 tsp onion powder
1 tsp garlic powder
1 tsp white pepper
1/2 tsp Paprika
Green Chillie to taste (optional)
Mix the above and separate into around 6 85g balls

I leave this covered in the fridge till I’m ready to prepare . Before making the burgers, bring the patties to room temperature to avoid shrinkage.
Place the patties onto a hot flat grill, if it’s not a non stick, use oil. Using 2 spatulas press down to flatten and for good caramelisation.
Flip over, top with your cheese and jalapeños /grilled onions if using. Cover using a domed lid with a tiny splash of water to melt the cheese. Stack the patties if you’re making doubles. Add your sauce to your toasted buns, then lettuce gherkins, tomato and whatever toppings you enjoy, then place the smash patties on top, close the bun with the top half and Enjoy immediately!

Big Mac Sauce (double up for 3 or more burgers)

1/2 cup creamy Mayo
Squeeze of tomato sauce
Squeeze of mustard
A dash of Paprika
1/4 tsp Garlic powder
1/4 tsp Onion powder
A dash of Salt
A dash of White pepper
A sprinkle of sugar
And 1 T finely chopped onion
1 T finely chopped gherkins
1 T gherkin liquid/pickle juice
Add 1/2 T chopped pickled jalapeño if you want it spicy

Grilled Halloumi Couscous Salad

I am a huge couscous fan, in fact… I could literally have it daily…
I love that it works so well with fresh ingredients and that it literally takes almost no effort to prepare the actual couscous.

Perfect for lunchboxes, and for meal preps.
You can easily add chicken or roast veg or Both… and replace the warm Halloumi with feta. It’s the most versatile base with so many options and so much deliciousness!

Grilled Halloumi Couscous salad
By

Add 1/2 cup couscous to 1 cup boiling water, 1 tsp veg stock, 1 Tablespoon cranberries, a drizzle of olive oil.
Mix and cover for 10-15 mins.
Fluff up with a fork and keep aside.

Top with

1/2 Avo cubed
1-4 cup Cucumber cubed
2 Tablespoons Rosa Tomato cubed
2 Tablespoons Sliced Cashews roasted in olive oil or almonds (add the olive oil into the couscous)
1/4 cup Chickpeas
Chopped Fresh mint and parsley
Salt & pepper
Grilled Halloumi cubed/ feta cheese
1T Chopped red onion

Add the above except the Halloumi to the couscous and squeeze over lemon juice, red chillie flakes, more cranberries and herbs.

Toss just before serving or toss before and keep a little of the toppings aside for presentation

Add the Halloumi warm, just before serving.
