FOOD SAFETY SYSTEMS NEED TO WORK EVERY DAY

Food-safety problems often begin with inconsistency.

One shift labels and dates correctly.

Another relies on memory.

One delivery is checked and recorded properly.

The next is accepted without enough control.

The Food Safety & Hygiene Pack was developed to help chefs, kitchen managers and hospitality operators introduce clearer procedures and more consistent daily records.

The pack covers practical areas such as:

• Personal hygiene
• Delivery acceptance
• Storage and labelling
• Cooking, cooling and reheating
• Cleaning and disinfection
• Waste and pest control
• Daily and weekly verification

It brings together practical SOPs, forms, checklists and manager guidance designed for real hospitality kitchens.

STRONGER SHIFTS START WITH BETTER CONTROL

A kitchen shift is more than service.

It starts with opening properly, briefing the team, checking station readiness, communicating clearly, managing service flow and finishing with a proper handover and close.

Running the Shift is a practical guide for chefs, supervisors and kitchen leaders who want stronger structure, clearer communication and better operational control throughout the full shift cycle.

OCTOBER CONSULTING AVAILABILITY

A lot of kitchen problems are visible long before they become serious.

Poor prep flow.
Weak stock control.
Inconsistent standards.
Communication gaps.
Unclear responsibilities.
Service pressure that keeps repeating for the same reasons.

One of the areas I’ll be available to support during October is short, focused kitchen operational assessments.

The aim is not to walk in and produce a long report that sits in a drawer.

It is to look at how the kitchen is actually operating, identify where control is being lost, and give practical recommendations that can be implemented by the team.

This can include:

• Kitchen workflow and service readiness
• Stock and ordering practices
• Food safety and operational standards
• Team structure and responsibilities
• SOPs and daily controls
• Preparation and production systems

I have a limited consulting window available in the Eastern Cape during October between international assignments.

If your kitchen could benefit from a practical operational review, get in touch.

Rare beef fillet with charred corn, fondant potato, red w**e jus and chilli-infused oil.

This plate was built around contrast — tender beef, sweetness from the corn, richness from the fondant potato and jus, and a controlled lift of heat from the chilli oil.

Good plating matters, but the real work is making sure every component has a reason to be there.

FOOD COST PROBLEMS START LONG BEFORE THE MONTH-END REPORT

Profit is often lost through small operational leaks rather than one major mistake.

Where Your Food Cost Is Going is a practical guide for chefs, kitchen managers and hospitality operators who want to understand where value is being lost across the daily kitchen operation.

It follows food through ordering, receiving, storage, preparation, portioning, waste and stock control — showing how repeated losses can quietly damage margin over time.

Available now on Amazon Kindle for USD 9.99.

SUNDAY SESSION

Training is not something that happens once during induction.

It is an ongoing part of running a strong kitchen.

Teams need clear demonstrations, practical repetition and regular feedback. They also need to understand why a standard matters, not simply be told to follow it.

When training is inconsistent, the results usually show up quickly:

Uneven portions.
Poor preparation.
Food-safety risks.
Wastage.
Weak communication.
And standards that depend entirely on who is working that day.

Good training creates confidence.

It helps people work independently, make better decisions and take greater ownership of their section.

The goal is not to make a team dependent on the Head Chef.

The goal is to develop people who understand the standard and can maintain it even when the Head Chef is not standing beside them.

What is one area where you believe professional kitchens need more consistent training?

The Chefs Effect now has a dedicated home for our Kitchen Development & Operational Improvement Programmes.

The programme family includes:

• 2 Weeks — Assessment & Improvement Sprint
• 4 Weeks — Operational Intervention
• 6 Weeks — Focused Improvement
• 8 Weeks — Concentrated Development
• 12 Weeks — Comprehensive Development

Each programme is designed for a different level of operational need.

A shorter engagement may be appropriate where the priority is clearly defined and focused intervention is required.

Longer programmes allow more time for implementation, team development, reinforcement and embedding stronger systems into the day-to-day operation.

They are structured programmes, but they are not rigid packages and they are not compressed versions of one another.

The final scope is agreed around the actual priorities of the hotel, lodge, resort, restaurant, catering operation or hospitality group involved.

The detailed programme brochures can now be viewed and downloaded directly from the programme page.
