Before anything reaches the plate, this is where it starts. Fresh ingredients, mountains in the distance, the deck just beyond the counter. It's hard not to cook well with a view like this. Some of the best inspiration doesn't come from a recipe book.
It comes from looking up.

Oak doesn't just hold the w**e, it shapes it.

While these barrels sit quietly on the racks, they're doing more work than it looks. Tiny amounts of oxygen pass through the wood over months, softening tannins and rounding out the w**e's edges. At the same time, the oak itself lends flavour, hints of vanilla, spice, toast, sometimes even coconut or clove, depending on how the barrel was made. Nothing about this is fast. It's patience, wood, and time, quietly turning good w**e into something better.
