We have had people saying they are not sure how to use marjoram, so we have decided to start a recipe corner to show you how to use some of our herbs.

RECIPE CORNER!
Marjoram is great with fish. Take fresh fish preferably bream and rub it down with the following mixture.

1 tablespoon of olive oil
Fresh marjoram leaves according to taste
Sea salt and black pepper
Juice from a lemon or orange (optional)

Rub this on your fish and if you like put some marjoram sprigs on the inside of the fish. If the fish is quite large, cut slits on either side. Be sure to rub the oil mixture into the slits as well.

Grill it over hot coals turning frequently until cooked through.

Red basil is great in dips, sauces, salads or as a garnish. It has a lighter flavour than its green counterpart which is more common in Zambia.
