This tasty one-pot chicken and rice dish is a comfortable and delicious supper to prepare for mum.
Ingredients
• 6–8 Sable chicken thighs or drumsticks
• 1½ cups long grain rice
• 1 onion, chopped
• 3 cloves garlic, minced
• 1 can chopped tomatoes
• 2 cups chicken stock
• 1 tsp paprika, 1 tsp cumin, salt and pepper
• 2 tbsp oil
Method
1. Season chicken and sear in oil until golden. Remove and set aside.
2. In the same pot, fry onion and garlic until soft.
3. Add spices, stir for 1 minute. Add tomatoes and stock.
4. Stir in rice, then place chicken pieces on top.
5. Cover and simmer on low heat for 25–30 minutes until rice is cooked and liquid is absorbed.
6. Serve directly from the pot. Less washing up. More flavour.
