Creamy Chicken Enchiladas

Shredded chicken, corn, roasted hatch peppers, roasted green peppers, cilantro, Monterey Jack cheese, and yes, cottage cheese (trust me it’s so creamy and you won’t know it’s there).
Comes with a Rojo salsa (this is very different than my usual enchilada sauce. It’s much more of a “fresh or raw” tomato taste.) and extra Monterey Jack.
Try and see if you like them!! And please give me feedback.

You asked for it - Patitsio!

This “Greek lasagna” has a base of pasta with beef in a cinnamon scented tomato sauce. It’s then topped with a rich and creamy béchamel.

You’ll need to pop it in the oven for about 40 mins at 400 to warm it though and brown the top.

This size can serve at least three.
It also freezes very nicely.

I prepared the chicken differently this week. It’s the same amount it’s the same seasonings. Just wanted to try something different. Let me know what you think.
