The penultimate punch down creating a rich depth of flavour in our natural Amber Wine (our orange wine). Tomorrow night we press these beautiful grapes. It smells amazing already. We’ve rarely been as excited about making a wine as this one. Grown without pesticides, herbicides or fungicides. Just sunlight, soft Derbyshire rain and rich fertile soils. No sulphites, no added yeasts. Just the yeasts that are provided from our local environment. So they’re favouring our wonderful grapes.

Earlier this week we could press the skin cap down with ladle but now it needs a much greater amount of force and so it’s been hands on for some days now as all the CO2 pushes up the grape skins! It’s rather pleasing to get hands on with the wine too.

Apologies for the alarm, it’s a bit shrill but helps to tell us that the levels of CO2 are safe (they were depute the noise) and it’s useful for indicating how active the ferment is.

Do you like Orange or Amber wine? What about an Amber wine from the Amber Valley? It’s a thing.
Routine and consistency is key to good winemaking, early starts, late nights, if that’s what’s required then that’s what it takes.
This year we’re making our own Amber Wine onsite here in the Amber Valley.
Solaris based predominantly, picked in our little vineyard on 31st August. Amazingly early in this remarkable year.
With good, clean regeneratively grown grapes that haven’t seen a single spray. Exciting.

Winners! Two Silver Medals 🥇 and a trophy! 🏆 Our delighted little team had a fun day with for a members day and lunch. Such fun and as always, a wonderful competition organised, hosted and participated in by lovely people. We won the Members Choice trophy for our amazing Amara Pinot Noir Précoce, so I now have a lovely but fragile ornament to play host to for the next year - better put it out of reach of the cat! 🐈

Twice daily punch downs help keep the skins wet, to keep the skin cap fresh, and to extract the beautiful tropical fruit characters of the Solaris grapes and to pick up the amber and orangey hues from the berries. Tannins and oxidative notes that express themselves as fino-like (sherry-like) notes, are the discombobulating elements of this singular wine style. Something extraordinary is in the making…

Today, we harvested our Solaris and Seigrebbe grapes for our Amber Wine, first time ever in the month of August. Destemmed, crushed and vinified onsite, this natural wine will be the embodiment of this wonderful valley. Thanks to for coming and helping. A wonderful day!

🍎🍇 THE AUGUST ORCHARD MARKET IS TODAY! 🍇🍎

The sun is up and we’re getting ready to welcome everyone to Amber Valley Vineyards TODAY from 10am–3pm for our August Orchard Market!

We’ve got a fantastic selection of new stalls alongside some familiar favourites, with local produce, crafts, honey, ice cream, coffee and plenty more to browse.

🍕 We Are Tre Amici Pizza are joining us for the first time with their pizza wagon and freshly made pizzas.

🎶 Live music from AJ Acoustic Duo throughout the day.

🍷 And the Amber Valley Vineyards bar will be open, serving our own wines and ciders to enjoy amongst the vines and apple trees.

Sat 29.08 Amber Valley Wines for their monthly orchard market. Free entry so pop along for a coffee, matcha and WINE.

Sun 30.08 Morton Village Hall - Derbyshire the Sitwell Pub opposite has their charity festival all weekend. Again, free entry, coffee, matcha and live bands. We will be open until 7pm.

Mon 31.08 Old Bolsover Town Council Medieval Madness. Free entry… coffee, matcha and jousting!!

Yesterday evening, betwixt heavy showers we decanted the wines from the delivery wagon, into the Cellardoor with Jason’s help, from - highly recommended for save and efficient transport and handling! We love a fresh from the winery delivery like this! And as soon as they’re labelled our famous Millstone Solaris 2025 will be for sale! 😁
