The penultimate punch down creating a rich depth of flavour in our natural Amber Wine (our orange wine). Tomorrow night we press these beautiful grapes. It smells amazing already. We’ve rarely been as excited about making a wine as this one. Grown without pesticides, herbicides or fungicides. Just sunlight, soft Derbyshire rain and rich fertile soils. No sulphites, no added yeasts. Just the yeasts that are provided from our local environment. So they’re favouring our wonderful grapes.
Earlier this week we could press the skin cap down with ladle but now it needs a much greater amount of force and so it’s been hands on for some days now as all the CO2 pushes up the grape skins! It’s rather pleasing to get hands on with the wine too.
Apologies for the alarm, it’s a bit shrill but helps to tell us that the levels of CO2 are safe (they were depute the noise) and it’s useful for indicating how active the ferment is.
