TRENDING: Bread seller sued over viral comment on bread lasting for weeks on the shelf

With the recent trending story of a bread seller allegedly being taken to court after commenting on a loaf that stayed fresh on the shelf for weeks, many people have quickly pointed fingers at potassium bromate.

Let’s be clear: potassium bromate does NOT prevent mold growth or extend bread shelf life. Its primary use is as a dough improver, and it has been a major regulatory concern in bread production.

As a bakery consultant, I understand the simple science and techniques behind long shelf-life bread products, and I already share this knowledge with several clients, both within and outside Nigeria.

The truth is, extended shelf life is often achieved through proper formulation, hygiene, moisture control, packaging, and approved preservativesβ€”not necessarily anything dangerous.

Many of the same food-grade preservatives used in bread are also commonly found in products like yogurt, biscuits, and other processed foods.

However, the real concern is regulatory compliance.

In Nigeria, the key issue is whether the ingredients used are NAFDAC-approved for bread production. NAFDAC has repeatedly warned against the use of unapproved additives in bread.

For example, calcium propionate is widely recognized as the approved anti-mold preservative for bread, while properly formulated potassium sorbate blends can also help achieve a longer shelf life when used correctly and within regulatory limits.

The conversation should not just be about fear it should be about food science, transparency, and compliance.

This is how we produce pita bread (shawarma bread).

When I mentioned in my earlier post that we can produce this flatbread with just a few simple pieces of equipment, I meant it no exaggeration.

Pita bread is actually one of the products I was introduced to many years ago during my time working under a Lebanese kitchen boss, where I learned the traditional manual method of production.
