Mechanical polishing and electropolishing serve different roles in preparing stainless steel for high-purity service.

Mechanical polishing establishes the surface geometry. Electropolishing refines the surface at the microscopic level by preferentially removing surface peaks and reducing the mechanically disturbed outer layer left by fabrication.
