Have you all every tried pan roasting green coffee beans, this is truly something very unique and special. I recommend you do it outdoors and of course be very very careful. You can easily hurt yourself as things to get very hot !!!

Coffee contains diterpenes, mainly cafestol and kahweol, that can raise LDL (“bad”) cholesterol. Cafestol is the stronger cholesterol-raising compound.

The simplest way to remove most of it is to filter brewed coffee through a paper filter. Cafestol and kahweol are oily compounds, and the paper traps much of those oils.

In practical terms:

* Best for cholesterol: drip coffee made with a paper filter, pour-over with paper, or filtered decaf.
* Higher cafestol: French press, boiled coffee, Turkish/Greek coffee, and Scandinavian-style boiled coffee.
* Espresso: contains cafestol too, but the total exposure depends heavily on how many shots you drink.
* Cold brew: can retain coffee oils unless it is subsequently paper-filtered.

If your goal is specifically to protect LDL cholesterol, I’d favor 100% Arabica coffee brewed through an unbleached paper filter and avoid routinely drinking French press or boiled coffee.

Honduras is more than a country connected to our family, it is an essential part of who we are.

The Kafie family’s history in Honduras dates back to 1901. Over the generations, members of our extended family have established and guided more than 50 companies across the country, contributing to its commerce, employment and economic development. My wife’s family also helped build one of Honduras’s largest and most historic coffee companies, with roots dating back to 1933.

The strongest families I have known are often the quietest. They do not seek attention or measure success by public recognition. Instead, they devote their energy, knowledge, education and inherited traditions to the products they make, the services they provide and the businesses they are entrusted to build.

Their work happens steadily and often behind the scenes: protecting quality, navigating disruptive forces, creating employment and maintaining the sustainability of the enterprise. A strong foundation provides stability, not merely for today, but for generations yet to come.

The tides come in and go out. The winds change direction, and difficult seasons inevitably arrive. Yet we remain steadfast, rooted in Honduras, faithful to our history and focused on building enduring businesses for future generations.

This coffee sack represents far more than a harvest. It represents the soil of Honduras, the dignity of hard work and more than a century of family history.

Celebrating Our Origins (with love and respect).

Long before Kafie 1901 Coffee Co. was created, the seeds of our story had already been planted in Honduras.

In 1933, my wife Vivian’s ancestors, Don Gabriel Kafati and Doña Elena Kafati, founded Café El Indio. What began with a small coffee roaster, tremendous sacrifice and an unwavering commitment to quality grew into one of the largest and most recognized coffee companies in Honduras and Central America.

For generations, Café El Indio became part of the daily lives of Honduran families. Its aroma filled homes, its delivery vehicles traveled the streets and its familiar image became deeply woven into the culture and history of a nation.

Today, Vivian and her ancestors are the inspiration behind Kafie 1901 Coffee Co. We are not attempting to recreate the past, we are honoring it. We are carrying forward the values they left behind: faith, family, hard work, perseverance and respect for the extraordinary craft of coffee.

The historic images shared here represent more than an old factory, delivery vehicles and advertisements. They represent sacrifice, vision and the courage of a family that built something meaningful from the ground up.

Our journey did not begin with us. We are simply the next generation entrusted with carrying the torch, with gratitude, pride and honor.
