Nick Mehmke grew up driving tractors and working cattle before he ever picked up a chef's knife. From culinary school in Portland to the kitchens of Big Sky, Fort Benton, and Lake Geneva, Mehmke has spent decades chasing good food made with intention.

As head chef of The Union, he's back behind the stove and their blended family of five is planting new roots in Helena. 🌾

The land shaped him. The kitchen keeps calling him home.

The Windbag building has seen it all! Originally a dry goods store, morphed into several different businesses throughout the years...a bo****lo, a burlesque hall, a bank, a bowling alley, a brothel. Currently? It's your new favorite pub and dinner spot. 🍻
