Jim traveled the world's most reputable wine regions tasting and gathering information while living at the wineries and learning from their proprietors. Patti's farming background and clinical nursing background helped to developed a very meticulous approach to winemaking. Her superior palate makes her very valuable as a winemaker and as a cellar wine taster. Jim & Patti purchased a Western Reserve hay field in 1994, planted the vineyard in 1996, became certified organic in 1997, opened the winery in 2001. We use organic methods to balance the vineyard soils and foliar needs combined with draconian low grape yields (through pruning). We practice old world viticulture and oenology. Patti has conducted a number of research projects with grants from SARE and other organizations which support organic farming methods, sustainability, and biodiversity in agriculture and food processing. Our grapes are of French origination and are grown in Ohio clay on European trellising structures. Picked when their flavors say they are ready, the juice from the grapes are processed as they were hundreds of years ago. We use old-fashioned, expensive French and Hungarian Oak barrels for SUR-LEE aging and do minimal filtering. Most of our wines are bottle aged for at least a year, and we maintain a library of our older wines for members and for tracking our cellar worthy wines and assess their quality, which is reported periodically to our exclusive membership. We use genuine corks to close our bottles, exclusively. Our vineyard is naturally fertilized by sheep, chickens, horses and several wild animals. Our wines tend to be patterned after Bourgogne, Bordeaux and Alsatian styles. We offer wines which can hold their own against traditional European wines and often are equal or exceed the highest quality of similar styles from France. We have evolved into a small cottage industry style of winery. We are very passionate about the quality of our wines. Patti's family has been indigenous farmers for many generations, making their own tools, growing 100% of their own food, making their own wine, and supplying farm produced food and beverage to surrounding residents near their farm in Pennsylvania. Jim used his spare time to research world class wine operations. Jim and Patti both share a common desire to produce the highest quality wine possible from Ohio clay soils and Lake Erie's micro-climate.
