Harvest is almost here. But the vineyard decides exactly when. 🍇
These photos are a snapshot of the vines right now, with some grapes getting very close and others still needing a little more time.
Our first picks will include grapes destined for sparkling wine. From there, harvest will unfold variety by variety, each coming off the vine when it reaches the right point of ripeness.
And figuring out that right point involves a lot more than looking at the color of a grape. Our Cellar team is in the vineyard daily, collecting samples and bringing them back for testing. They’re watching sugar levels (Brix) as the fruit ripens, along with pH (acidity), all pieces of the puzzle when it comes to the balance we ultimately want in the finished wine.
