While the grapes are ripening something else is happening in the vines: they're getting ready for winter. The shoots have stopped growing and the green tissues are turning brown as they become woody. Green tissue dies in winter, woody tissue can survive well below zero.

We have completed removing leaves around the grape clusters. The fruit is exposed to the sun so it can fully ripen this fall. Think about conditions after the fall equinox: nights are longer than days, the sun is low in the sky, and there's dew on the leaves in the morning Leaf removal allows the fruit to gather what warmth there is, dry out and continue ripening until mid to late October. That's what sets the stage for great wines!
