🍇 From sugar to Sauvignon Blanc

Before w**e becomes w**e, it starts as grape juice, and that juice contains naturally occurring sugars. One of the ways we measure those sugars is through Brix, a measurement that tells us the concentration of sugar in the grape juice.

Why does that matter? As yeast ferments the juice, it consumes those sugars and converts them into alcohol. So, the Brix level helps our w**emaking team determine when the grapes have reached the right level of ripeness and gives us an idea of the potential alcohol in the finished w**e.

Of course, there’s a lot more to it than just a number. Different grape varieties ripen at different rates, and factors like temperature, weather, and growing conditions can all influence how quickly grapes accumulate sugar.

And while we’re measuring sugar in the juice, that doesn’t mean our finished w**es contain residual sugar. In our Sauvignon Blanc, the yeast ferments the available sugars, leaving us with a dry w**e rather than a sweet one.

So this little Brix test is one piece of the bigger picture, helping us decide when to pick and how to guide the grapes from vineyard to bottle 🍷
