Did you know cream of tartar comes out of wine barrels?

It's potassium bitartrate. As grape juice ferments, tartaric acid crystallises on the inside of the barrels and tanks. Those crystals get scraped out, purified and ground into the white powder sitting in your baking cupboard.

Which explains what it does. It's an acid. A pinch into egg whites stabilises the foam so your meringue holds instead of weeping. A pinch into a sugar syrup stops the sugar crystallising and going grainy.

Considering how much wine this country makes, it's a fairly local ingredient by accident.

In 1939 a woman in Molteno started baking buttermilk rusks off a family recipe to bring money in during the Depression. Her husband ran the Ford dealership in town, so the bakkie became the delivery vehicle. The barn became the factory.

In 1941 the Industrial Development Corporation handed out the first loan in its history. It went to her.

Elizabeth Anne Greyvensteyn. Ouma Nannie. The factory is still on the same farm outside Molteno.

Worth keeping in mind if you're currently baking out of a home kitchen and it feels small.
