🐝 We often say the bees know what they're doing long before we do.

While returning supers to one of the apiaries after extracting our spring honey, I spotted a bee working the nearby bean flowers.

A few weeks ago, much of the focus was on the bright yellow spring forage across the landscape. Now the season is beginning to change again, and the bees are already moving on to what comes next.

It's one of the things I find most fascinating about beekeeping.

The landscape changes, the forage changes, and somehow the bees always seem to be one step ahead.

Sometimes we spend just as much time watching outside the hive as we do looking inside it 🐝🌾

One of the questions we're asked most often is what makes soft set honey different from runny honey.

The answer is actually very simple.

Nothing is added and nothing is taken away.

It's still the same natural honey from the hive, just carefully controlled during the natural crystallisation process to create a smoother, spreadable texture.

Perfect on toast, porridge, yoghurt, or simply enjoyed by the spoonful.

Whether you prefer runny or soft set usually comes down to personal preference, but both begin exactly the same way — with the bees 🐝
