Drop a “🔮” in the comments for moody, or a “🕸️” for bright…

Surprisingly, the difference between a good blend and a great one is often less than five percent.

Every year, we ferment all six varietals separately, then sit down with sample after sample deciding exactly how much of each goes into the final blend. A percent more Petit Verdot changes the whole shape of a w**e. A percent less Malbec and it falls flat.

It’s tedious, precise work, and it’s also our favorite part of the year. The part nobody sees, but makes all the difference.

October feels like the right time to admit w**emaking has always been a little bit witchy.

Underneath the tasting room, barrels sit in the dark for months, aging quietly while the w**e changes in ways that are hard to explain until it’s in your glass. No lights, no notes, just time and a little oak doing its work.

It’s a strange process if you think about it too long: liquid sitting in wood, tended by people who trust something they can’t fully see happening.

Before it meant magic tricks, alchemy meant lab work. Medieval alchemists spent their nights distilling, measuring, and testing formulas, trying to transform lead into gold. They never pulled it off, but their methods became the foundation of modern chemistry.

We think about our own cellar the same way. Precise ratios, patient timing, and a lot of testing before anything makes it into a bottle… Usually with a bit better odds of success than the medieval alchemists that came before us.

The Rocks District doesn’t make w**emaking easy. Basalt cobblestones hold the day’s heat and release it back all night, vines dig deep for water in soil that barely holds any, and the swing between hot afternoons and cold nights does the rest.

Defiant III is our third vintage off this ground, and every year it shows vividly just how much a w**e’s character comes from its place.

We’re grateful for a site this demanding, and for what it keeps teaching us. Enjoy while this vintage lasts.

W**e myth, busted: fancy “legs” don’t mean a w**e is better.

Those streaks running down the inside of your glass are called legs, or tears, and they’re just physics. Alcohol evaporates faster than water, which changes the surface tension and pulls w**e up and back down the glass. It’s called the Marangoni effect.

More legs just means more alcohol, not more character. A high alcohol jug w**e will out-leg a much better bottle every time.

Next time someone swirls dramatically and says “look at those legs,” you can let them know what’s actually happening. Or just let them have the moment.

Defiant III is coming.

Drawn from multiple vintages and shaped by time, this newest release captures the distinct sense of place synonymous with one of the most distinctive w**egrowing regions in the world. Ancient basalt cobblestones, deposited by the Walla Walla River, blanket the vineyard floor, absorbing the day’s warmth and releasing it through the night, creating w**es of remarkable depth, energy, and character.

Defiant III is our third exploration of this extraordinary place, where rugged terroir meets patient craftsmanship. Layered, expressive, and unmistakable, it is a w**e written in stone and refined over time.

The magic returns soon.
