Summer Recipe: Chilled Cucumber & Herb Soup
Light, refreshing, and no oven required - perfect for hot Central Washington days.
Ingredients:
- 2 large cucumbers, peeled and chopped
- 1 cup plain Greek yogurt
- 1 clove garlic
- Juice of 1 lemon
- Fresh dill or mint to taste
- Salt and pepper
- A drizzle of olive oil to serve
Directions: Blend cucumbers, yogurt, garlic, and lemon juice until smooth. Season to taste. Chill for at least 30 minutes. Serve cold with fresh herbs and a drizzle of olive oil.
