A lot of restaurant owners think hiding cash sales helps them save money on taxes.

Maybe it does today.

But when it's time to sell? That's when the real cost shows up.

Buyers, banks, and SBA lenders don't pay for what you say you made. They pay for what you can prove you made.

If the cash never made it onto the tax returns, it usually doesn't count toward the value of the business.
