The BEST bleu cheese dressing comes from your own palate, concept and creation. My house made creation came to life overnight as the flavors had time to meld (that's not a typo)

I used 3 # bleu cheese, 3 # sour cream and 1 quart of buttermilk. To that I added kosher salt, black pepper, cayenne, garlic, oregano and fine herbs.

This just past CHEF TODD 's seal of approval taste rating. Thick, rich, full of flavor. Ready for my bleu cheese iceberg wedge salad at my American Steakhouse menu show tonight at MESA, A Live Dining Show

Hot from the oven, dark chocolate torte on walnut shortbread. This is the dessert course for The Chef Todd Show Saturday night at MESA Collaborative Kitchen in New Albany, IN.

I'm plating long slender cuts of torte with white chocolate and fresh raspberries. Pinot Noir or a strong bodied black coffee is my pairing recommendation.
