Why does wine take so long to make?

The wine tastes muted and unbalanced immediately after bottling. It needs at least four to six months of completely undisturbed rest to heal and regain its original profile.

Patience is the most important tool in the cellar. Top producers will hold bottles for years before releasing them to ensure the wine has fully recovered from the bottling line.

Things are really starting to take shape out here in Napa!

We are prepping to pour concrete down in the new wine cave. The v***r barrier and rebar are completely laid out for the barrel storage area, and scaffolding is up outside to start the stonework around the main entrance.

Up top, the tasting room framing is coming along nicely, and the view from the patio is already unbeatable. Construction is moving fast and we are getting closer every day.

Grapes do not start as small berries…

Before any fruit sets, the vine produces clusters of tiny white flowers. This brief flowering stage dictates the yield for the entire season.

Proper pollination at this exact moment is critical. Wind handles the heavy lifting here, turning those pollinated flowers into the first tight green berries of the crop.

Right now the vines are in an aggressive growth phase, pushing new canopy by inches every single day. Keeping the rows tucked and managed ensures the fruit gets the right amount of sunlight to mature properly!

We’re getting closer! Here’s a behind-the-scenes look at the latest construction progress happening at Aadland Moody Vineyards.

What’s New:

The Tank Room: We’ve got massive 22-foot ceilings, and the blue glycol lines are officially in! These will keep our stainless steel tanks perfectly chilled so fermentation stays on track and our white wines are perfectly stabilized.

The Tasting Rooms: Drywall is going up on the upper level, and we are framing out the massive sliding windows for the formal tasting room.

The View: Just wait until you see the stunning vineyard views straight through the glass doors of the tasting room!

We can’t wait to share a bottle with you all soon. 🥂

Meet our latest addition: Petit Verdot!

This dark and thick-skinned grape packs an intense punch of color, tannin, and acidity. Winemakers typically use it in small amounts to add structure and deep violet hues to classic Bordeaux blends. When grown in warmer climates where it can fully ripen, it develops rich flavors of dark blackberry, lilac, and sage.

It serves as the structural backbone of many world-class red blends, and we’re proud to add it to our collection of vines!

What exactly does AVA mean on your wine label?

It stands for American Viticultural Area. You can think of a major region like Napa Valley as a large puzzle broken down into 16 smaller, distinct zones. As growers, we know that dirt, climate, and elevation change drastically from the eastern slopes to the valley floor. Planting the exact same Cabernet Sauvignon grapes at 1,300 feet up a mountain versus down at sea level produces entirely different results due to those harsh environmental shifts.

The ground you work dictates the quality of your yield.

Our 2023 Spring Mountain Cabernet scored a 96 from the James Suckling Group! 🍷

This limited release (only 200 cases!) is bursting with fruit and an incredible flavor profile that will only get better with time. We’re so proud of Mario and the crew for growing the finest grapes on Spring Mountain. We can’t wait to share this with all our friends—both old and new. Cheers! 🥂

We just tasted our ‘25 Cabernet Franc, and the results from its first leaf are amazing! We brought in about half a ton, which gave us one full 50-gallon barrel and a few kegs to top it off.

Looking Ahead to Next Harvest 🍇

Next year, we’re shooting for ¾ to 1 ton. With our tight spacing, 6-foot rows and 4-foot interplanting, the key is making sure we don’t overcrop. These younger vines have the vigor to handle it, but we have to manage the yield carefully to ensure every single cluster ripens perfectly.
