Weeknight wine pairing: Seattle-style teriyaki and rosé.

Growing up, weeknight takeout didn't mean pizza, it meant teriyaki, and for my family that meant Toshio's on Rainier, every time.

I was back in Seattle a few weeks ago and went straight there. The char on the chicken, the slightly sweet sauce, and that bite where the rice and teriyaki and salad with that dressing all end up on the same fork. A perfect bite.

Our rosé turned out to be a great match, bright grapefruit and good acidity balancing the char and sweetness.

If you live in Seattle, you already know exactly what I mean. If you don't, I'm sorry, but it looks like you need to plan a trip.

This wine was made in a bubble. Literally a bubble -- whole clusters sealed in a bin with CO2, fermenting from the inside out for 7 days before I press them.

This grapey nightmare is called carbonic maceration, and my lo-fi version involves pallet wrap and a couple buckets of borrowed syrah. The result is a super bright, crushable red -- truly a perfect chillable red for summer.

Dr. Sylvia Morris and Dr. Angela Walker are incredible -- I met them at the Georgetown University Women's Forum earlier this year where we were all speakers, and that Georgetown connection is just something else. Hoyas finding each other out here in the wild.

We talked about the winding road from Georgetown's School of Foreign Service to winemaking, what "low intervention" actually means, moving hand line in alfalfa fields, and why I finally said LFG and started going to where the people are instead of waiting for them to show up in Walla Walla.
