Warm up with a rich and comforting bowl of Ostrich Biltong Soup. Packed with flavour and perfect for chilly evenings.
Ingredients
- 125g butter or margarine
- 200ml cake flour
- 500ml milk
- 2ml ground nutmeg
- 2ml ground coriander
- 200ml fresh cream
- 100g biltong powder
- 200ml grated cheddar cheese
- 1500ml beef stock
- 1ml salt
- Black pepper to taste
- Extra biltong for garnish
Method
- Melt butter in a saucepan. Add flour and stir over low heat for 1 minute.
- Add milk while whisking until smooth and slightly thickened. Add stock, spices and seasoning and simmer for 10 minutes.
- Add cream and biltong powder and heat through. Remove from heat and stir in cheese.
- Garnish with extra biltong and serve hot with fresh bread.
